Nothing says fall like pumpkin spice or the smell of oatmeal chocolate chip cookies baking in the oven.

One of my favorite things to bake is cookies— I could probably eat cookies every day. 😋

Do you have any fun memories of baking as a kid? Mine was always licking the spoon after my mom mixed the batter. Even though she warned me about the raw egg, she would let me have a few licks anyway.

I don’t recommend eating cookies every day, but if you make them yourself, you know exactly what you’re eating.

Every dessert I make is a healthier version of a regular dessert recipe or one I make up entirely. After so many years of baking this way, I’ve become used to less sugary desserts and treats.

Pumpkin Oatmeal Chocolate Chip Cookies

  • 4 tablespoons of coconut oil room temperature
  • 1/4 cup coconut sugar or light brown sugar
  • 1 egg
  • 2 teaspoons vanilla
  • 1/2 of a cup pumpkin purée
  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 cup almond flour
  • 3/4 cup gluten-free flour
  • 1/4-1/2 cup oats


  • Preheat the oven to 350 degrees.
  • Blend the coconut oil and sugar together until smooth
  • Add the vanilla and egg and blend, add the pumpkin puree and mix well.
  • In a separate bowl mix the dry ingredients.
  • Add the dry ingredients to the wet ingredients and mix well after each addition.
  • Fold in the chocolate chips.
  • Use a tablespoon to drop the dough onto a baking sheet lined with parchment paper
  • Bake for 12 minutes until firm.


I find it easiest to use the dough at room temperature. If you refrigerate any unused dough, let the dough sit at room temperature to soften before you bake again.
